Salmon Tartare
Ingredient – Salmon, (a block of fillet for raw consumption) (7 mm dices) – 400 g, Lemon juice – 1tspn, Lemon peel – (as needed), Shallot (minced) – 10g, Soy sauce – 1 tbsp, S&B Wasabi Paste – 2 tsp, Chives (chopped) – 10g,
Directions –
Chop the salmon into 7 mm dice.Mince the shallot and chives.Mix the soy sauce, wasabi, lemon juice, lemon peel (grated), and (2) well.,Mix the salmon (1) with (3). Stuff the salmon into a round cercle (ring mold) set on a plate and lift the cercle carefully to make a perfect circle of tartare. Top with white radish sprouts as desired.

Wasabi Flavored Baked Sushi
Ingredients – Rice – 600 ~700 g,(Vinegar – 4 Tbsp, Salt – 1 Tsp, Sugar – 1 Tbsp) Salmon – 200g, Crab sticks (cut into 2 cm pieces) – 100g, Onion (minced) – 100gm, Egg (beaten) – 4, Salt – pinch, Sugar – 1 Tbsp, Walnuts – 50g, Chives – as needed, Korean dried seaweed sheets – As needed.
Directions –
Make the Sushi rice. Mix the ingredients of rice well until the salt and sugar dissolve and add it to the rice and mix.Make the scrambled egg. Beat the eggs and mix with the salt and sugar, and stir-fry in a frying pan until it is scrambled.Grill the salmon, remove the skin and bones, and break up into small pieces. Cut and break up the crab sticks and cut the onion into the specified sizes. Grease the inside of the heatproof baking dish with a small amount of oil (not listed in the ingredients). Put (1) evenly in the baking dish and put the walnuts randomly on the surface. Layer them as per image.Bake in an over at 200-220°C for 15-20 minutes until the surface becomes nicely brown.

Japanese-style Fried Prawns & Prawn Fritters with Wasabi Mayonnaise
Ingredients – (Japanese-style Fried Prawns), (Prawn Fritters – Prawns – 12, Flour – 2 Tbsp) (A – Flour – 5 Tbsp, parmesan cheese – 3 Tbsp), Egg(beaten) – 1, Water – 100ml, Vegetable oil – As needed,
(Wasabi Mayonnaise – S&B Wasabi Paste – 12 Tbsp, Mayonnaise – 2 Tbsp, Lemon juice – 1 Tbsp, Lemon peel – as needed)
Directions –
(Japanese-style Fried Prawns) Shell and devein the prawns and season them with salt and white pepper. Coat the prawns with the flour, beaten egg, and panko, and fry them in oil at 170℃ (340℉).(Prawn Fritters) Shell and devein the prawns and season them with salt and white pepper, then coat them with the 2 Tbsp of flour. Mix (A) in a bowl, add the beaten egg and 100 ml of water, and mix them to make batter. Batter 1 with 2 and fry in oil at 180℃ (360℉). Mix all the ingredients.
