The highest Italian risotto rice grade is Superfino. Three common types of Superfino rice are Arborio, Carnaroli, and Vialone Nano. These differ in length and vary slightly in starch content and texture. Arborio is the most popular short-grain rice for making risotto. When cooked, the rounded grains are firm, creamy and chewy compared to other varieties of rice, due to their higher starch content. It has a starchy taste and blends well with other flavors. Naturally high in starch, it cooks to a rich, creamy texture and absorbs flavours beautifully, making it the classic choice for authentic Italian risotto and other comforting rice dishes.

Ideal for: Dolce Vita Superfino Arborio rice is ideal for making creamy, flavourful risotto, rice pudding, arancini, hearty soups and stews, and satisfying rice salads. Try it in a traditional Italian rice pudding for a smooth, custardy finish. It’s also excellent for rice-based desserts where you want a tender, creamy grain that holds its shape and delivers consistent results.
Ingredient: 100% Arborio rice.
Cooking Instructions: 1 cup Arborio rice; 4 cups hot water or stock; 1 tbsp olive oil or butter; pinch of salt; 1 cup sliced mushrooms; 1 chopped onion; 1–2 cloves garlic; 1/4 cup grated Parmesan; fresh parsley. Preparation: Sauté onion and garlic in oil until soft and lightly golden. Add rice and stir for 1 minute to coat the grains. Pour in a ladle of hot stock or water, stirring until absorbed. Add mushrooms, then continue adding hot liquid a ladle at a time, stirring gently as it absorbs, until the rice is tender and creamy. Stir in Parmesan, taste and season, then serve hot and garnish with chopped parsley. Store in a cool, dry place; rinse only if your recipe calls for it.
